“Foole” is the Arabic word for beans, and the name of this popular meal is attributed to dried broad bean which is its main ingredient. The beans are boiled and served with boiled chickpeas, shopped tomatoes, parsley, onions, garlic, olive oil, and lemon. This can be served alone or with a yogurt and tahini sauce. Foole is a very fulfilling and inexpensive meal which is served with a variety of pickles in traditional Damascene restaurants.
